Number of Servings: 5

Ingredients

    Light meat from a 2 lb. rotisserie chicken (about 2 cups)
    1/2 cup chopped celery
    2 hard-boiled eggs, chopped
    1/2 cup light mayo
    1 heaping tsp. seasoning salt
    1 heaping tsp. lemon-pepper seasoning
    1/4 tsp. black pepper
    2 Tbsp. 99% fat-free chicken stock
    1 heaping Tbps. spicy brown mustard

Directions

Boil Two large eggs for 10-12 minutes. While the eggs boil, remove light meat from the rotisserie chicken and dice or coursely shred. Add celery and chopped eggs. In a separate bowl, combine mayo, seasoning salt, lemon-pepper seasoning, pepper, mustard, and chicken stock. Add to chicken mixture and coat completely. Keep refrigerated. Serving size: 1/2 cup. Can be served on a sandwich or with crackers. Enjoy!!!
