Introduction

Ingredients

1 lb ground turkey
1/2 c chopped onion
2 cloves minced garlic
2 Tbsp flour
1/2 c reduced sodium chicken broth
1/2 c soy milk or rice milk
2 c. prepared mashed potatoes
1 tsp salt
pepper to taste
1 tsp paprika
Directions
Preheat oven to 400 degrees.
In skillet, heat a drizzle of olive oil. Add turkey, onion and garlic and cook over medium heat until turkey is cooked through.
Sprinkle flour over the top and stir to combine. Add chicken broth and soy milk, bringing mixture to a simmer.
Keep at a low simmer, stirring constantly for 1 minute or until thickened. Season with salt and pepper to taste.
Transfer to a 9x9 casserole or pan. With a spatula, spread prepared mashed potatoes over the turkey mixture in an even layer.
Sprinkle the paprika over the top of the potatoes. Bake uncovered in the 400 degree oven for 25-30 minutes.
Serve with green beans or your choice of vegetable as a side.
