Ingredients
-
1 medium yellow onion, diced
1 medium red onion, diced
3 cloves of garlic, diced
2.5 cups Swanson reduced sodium beef stock
1 15.5 oz can Great northern beans
1 15.5 oz can Roman Beans
1 15.5 oz can Cannellini Beans
2 14.5 oz can Stewed Tomatoes (no salt added) chop up some of the larger pieces
1 tsp ground Cumin
1 tsp salt
1tsp pepper
1.5 tsp sweet paprika
1 jalapeno pepper chopped ( mine was not too hot)
1 tbsp apricot jam
small handful of fresh cilantro chopped
Directions
-Pour a little stock in the bottom of a large pan.
-Chop the onions and garlic and saute for 5 minutes in the stock.
- Add all the other ingredients except for the fresh cilantro.
-Feel free to add more seasoning according to your taste.
-Bring to a boil and then simmer for about 1.0-1.5 hours.
-Add the fresh cilantro when done.
Makes 7 1-cup servings.
Calories do not take into account the sour cream that you might add on top.
