Introduction

Really good with quinoa, couscous, or brown rice.

You can use chickpeas as well - my gilrls don't like them so I switched to great northern.

I like a lot of curry - use as you like

I do use Chicken broth or Veggie Broth - both are equally good. Of course you should go with the Veggie if your a vegetarian. :)

Number of Servings: 6

Ingredients

    2 Tbsp extra virgin olive oil
    1/2 medium onion, diced
    2.5 Tbsp curry powder
    2 cups black beans, cooked/rinsed
    1 cup great nothern bean, cooked/rinsed
    1 cup chicken broth
    1 15 oz can tomato sauce

    salt/pepper to taste


Directions

saute' onion in medium pan at medium heat until just soft
add curry and combine for approx 2 minutes
add beans , mix well
add broth and tomato sauce - mix well
raise temp to boil
reduce heat to medium low and cover
cook additional 10 minutes

makes approx 6 - 1 cup servings.

    Don't forget to make your Quinoa, Brown Rice, or Couscous, not that I forgot, I wouldn't do that ;)
