Introduction

Ingredients

    1 medium red potato (about 200 grams)
    2 cloves garlic, crushed
    1 Tbsp canola oil
    1 tsp paprika
    1 tsp coriander powder
    1 tsp cumin powder
    1 tsp rosemary powder, fresh, or dried
    dash salt
    dash pepper

Directions

Pre-heat oven (or toaster oven for small amounts) to 400 degrees F. Rinse and dry the potato. Slice the potato(es) into wedges or homefries style pieces with the skin on. In a small - medium mixing bowl, add all the spices and oil. Toss potatoes in spice mix to coat. Roast in a shallow pan or cookie sheet (with rim) for 15-20 minutes or until you can easily stick a fork in the potato pieces. Serve hot.

    Incredible!
    I made these for a small dinner party and I got rave reviews. I used a bit more garlic, salt and a pinch of cayenne pepper! It's always nice to serve tasty AND healthy food! TY - 1/25/09

    Potatoes should be turned halfway & mixing in the spices would be easier with water or if you coated potatoes with the oil & then the spices. - 1/9/09
