Introduction

A quick and easy salad you can make in a few minutes. If you don't have bok choy, don't be afraid to substitute in another green veggie. A quick and easy salad you can make in a few minutes. If you don't have bok choy, don't be afraid to substitute in another green veggie.

Ingredients

    2 cups of chopped bok choy
    1/2 cup chopped mushrooms
    1 garlic clove
    1 tsp olive oil
    1 tbsp soy sauce (I used Kecap Manis (indonesian soy sauce which is thicker and a little syrupy in texture)

Directions

Heat oil in a small saucepan over low heat.
Add garlic and toss until it is lightly browned.
Add mushrooms and stir fry until they are darkened and soft.
Add soy sauce (or kecap manis) and a dash of red wine or red wine vinegar if you like.
Toss in the bok choy and cook until reduced and softened but still crisp. Serve hot.

This is very nice with the Asparagus Asiago also on Sparkrecipes.
