Ingredients

MEATBALLS:
1/2 lb buffalo meat
1/4 coconut flour
2 eggs
1/2 salt
1/8 tsp pepper
1/4 tsp onion powder

MUSHROOM SAUCE
1 cup sliced mushrooms
1 cup sliced onions
1 Tbsp coconut oil
1 14 oz. can of light coconut milk
1 Tbsp cornstarch
2 Tbsp butter
1 tsp salt
1/4 tsp pepper
Directions
Combine the 1st 6 ingredients thoroughly. Roll the mixture into little meatballs and set aside.
Chop the onions and mushrooms. Saute the meatballs onions and mushrooms until the meatballs are brown on all sides. Using a wire whisk, combine the cornstarch and the coconut milk. When the mixture is smooth add it to the meatballs and vegetables along with the rest of the ingredients. Let the mixture simmer for 15 minutes, stirring occassionally. Serve over steamed vegetables.
