Ingredients

8 sugar free cookies, blended to crumbs
3 tblsp margarine
Spray oil
1 box of sugar free vanilla pudding instant mix
1 1/4 cup no fat milk, cold
8 oz. lite cream cheese
6 oz peach flavored diet/non fat yogurt
1 tsp. vanilla extract
6 envelopes of splenda
1 cup water packed peaches
Directions
To make the crust, blend the cookies in a blender until a nice consistency of crumbs. Melt the margarine in a medium bowl in the microwave, about 25 seconds. With a fork, blend the cookie crumbs and margarine until well mixed. Spray oil in a pie pan. Pat in cookie crumb mixture into pie pan. Microwave on high for 30 seconds. Turn pie and microwave 30 seconds more. Let cool.
For the pudding mixture: Mix pudding and milk until thick. Add lite cream cheese to pudding and mix well. Little by little add the yogurt until the mixture is smooth. Add vanilla extract and splenda and mix again. Spoon mixture into pie crust and refrigerate for 30 minutes to 2 hours. Put the can of peaches in the refrigerator at the same time. When you are ready to serve the pie, cut it into 8 pieces and as you serve each piece spoon on 1 tablespoon of peaches and enjoy.
