Ingredients

    1 tsp Olive Oil,
    6 ounces Chicken Breast, cut into strips
    2 GREEN ONIONS sliced diagonally
    2 TBS red bell peppers sliced thin
    1 TBS sliced GREEN OLIVES
    1/4 OF A 12 3/4 oz CAN OF ARTICHOKE HEARTS
    1 TBS Lemon juice,
    1 tsp Lemon Peel,
    PINCH OF SALT FREE HERB SEASONING BLEND
    Pinch of dried Basil
    1/4 tomatoes, chopped
    1/4 cup Couscous

Directions

1. In a skillet sprayed with nonstick vegetable cooking spray over medium-high heat, add olive oil, cook chicken strips 4-5 minutes or until done.

Add Green onions and red bell pepper, stir and cook for 2 minutes and add stuffed green olives, artichoke hearts, lemon juice, grated lemon peel, salt-free herb seasoning blend, basil and chopped tomato.

Heat through and toss with hot cooked couscous.

Recipe says it serves 1 but it was a lot.
