Number of Servings: 6

Ingredients

    8 oz. Bow Tie Pasta cooked by package instuctions.
    2 C. Frozen Peas or veggie of choice
    1/2 C Sun Dried Tomatoes
    1/3 C. Extra virgin Olive oil
    1/2 C. Slivered Almonds
    2 Cloves Garlic
    1/4 tsp Salt
    1/4 tsp. Pepper
    1/4 C. grated Parmesan Cheese
    2 C. chopped or shredded cooked chicken( May use purchased roasted chicken) or 2 C. cooked Shrimp.
    1/4 C Fresh Basil, snipped
    1/2 C. White wine

Directions

1.Cook Pasta in a large pot according to package During the last 2 mins of cooking time add peas. Drain and return pasta and peas back to pot.
2. Mean while for dried tomato pesto, in a food processor or blender, combine the dried tomatoes, olive oil, Almonds, Garlic, salt, and pepper. Cover and process until almost smooth. Add Parmesan cheese and blend to well combined.
3. To the pasta and peas in the pan add 1/2 cup white wine, dried tomato pesto, and cooked chicken. Toss gently with snipped basil.
Makes 6 1 cup servings
