This is a nice Sunday morning treat. The recipe doubles easily, and extras can be cooled on a rack and then frozen. Reheat in the toaster for a quick weekday breakfast for the kids. Ingredients

    1 c. whole-wheat pastry flour
    1/4 t. salt
    1/2 t. baking soda
    1/2 t. cinnamon (optional)
    2 t. organic sugar (optional)
    2 T. unsalted butter, melted
    7/8 c. lowfat buttermilk
    1 large egg

Directions

Makes 4 6" round waffles

Stir dry ingredients together. Whisk buttermilk, egg, and butter together. Stir wet ingredients into flour mixture. Pour 1/2 c. batter into waffle iron.
