These are little two-bite treats that go great as a side or a snack. These are little two-bite treats that go great as a side or a snack.
Number of Servings: 48


    1.25 cp all-purpose flour
    1 cp yellow corn meal
    1 tbsp baking powder
    1/2 tsp salt
    1 cp 2% milk
    1 (8.75 oz) can creamed corn
    2 large eggs
    1/4 cp canola oil
    6 oz shredded cheddar cheese
    1/4 cp sugar


Pre-heat oven to 375, grease/spray mini muffin tins. Set aside 1 cup of cheddar for garnish. In a medium bowl, combine dry ingredients with whisk or fork. Add milk, oil, corn, mix until batter-like. Fold in remaining cheese. Pour/spoon batter into tins and sprinkle tops with cheese. Bake 10-12 minutes or until puffed and golden.

Makes 4 dozen mini muffins or 16 large.
