Introduction

Throw in some raisins or even some chopped, dried cranberries.
For this recipe I used my own cooked, pureed pumpkin. You could probably use canned.

Ingredients

    1 C flour (all purpose or whole wheat)
    1/4 C packed brown sugar
    1.5 tsp baking powder
    1/2 tsp cinnamon
    1/2 tsp ground ginger
    1/4 tsp nutmeg
    1 large egg, lightly beaten
    1 TB canola oil
    1/2 C low fat vanilla soy milk
    1/2 C water or apple juice
    1 C pureed pumpkin
    1 small apple, peeled and grated

Directions

Whisk together in a medium bowl all dry ingredients.
In a small bowl combine rest of ingredients.
Stir pumpkin mixture into dry ingredients. Leave to stand for five minutes.
For each pancake, scoop 1/4 C batter onto a hot griddle or nonstick skillet sprayed with cooking spray.
Turn pancakes when bubbles appear and edges are cooked, about 2 mins. Cook for another 1.5 min on second side.

Makes 8-10 pancakes.
