Introduction

An easy quick way to make potatoes that's not overloaded with calories. If you have a George Foreman, it will work the best. An easy quick way to make potatoes that's not overloaded with calories. If you have a George Foreman, it will work the best.

Ingredients

    1 cup cubed raw potato (red or golden are best)
    1 tbsp Parkay squeeze margarine
    1 tsp dried or fresh chives
    1 tsp dried onion - or fresh if you prefer
    1 tsp minced garlic
    Salt and Pepper to taste

Directions

Best if you use a George Foreman Grill.

Cut up a red or golden potato into 1/2 inch cubes.

Lay the potato cubes on a plate and squeeze 1 tbsp of Parkay Squeeze Margarine on potato cubes. (Other butter or margarine can be used but the squeezable kind is easiest coat the potatoes with, and if you use another butter remember to adjust calories/nutrients).

Sprinkle the chives, garlic, onions, and salt and pepper to taste on the potato and margarine and mix to coat.

OPTION ONE: wrap potatoes in foil, making sure the potatoes are spread evenly and flat to cook evenly. -This will keep all the flavor in but make the potatoes more mushy. Cook until the cubes are soft.

OPTION TWO (pictured): put the potato cubes directly on the George Foreman. This allows the margarine to drip away from the potatoes leaving a bit less flavor, but makes the potatoes a little more crispy. Cook until the center of the cubes are soft.

Makes 2 servings, but I usually have both servings as a side dish to soup, salad or a turkey burger.
