Introduction

I have alot of trouble eating pork so when I tried this recipe I did not have high hopes. BOY WAS I WRONG!!! This recipe produces extremely tender, healthy pork chops that are overjoyed with flavor. I added a cup of rice, at my husbands request, but you could leave it out and put these over whole grain pasta, potatos, or even it solo with a slice of whole grain bread. Ingredients

    1lb of Sliced Pork Loin (raw)
    1 Can of Stewed Tomatos with juice
    1 Small Onion
    1 Bell Pepper
    1 Tablespoon of Chicken Bouillon
    Garlic Powder
    Onion Powder
    1 Cup of Rice (optional, but included into caloric info of recipe)

Directions

Arrange chops in the bottom of the crock pot and add chopped onion, chopped bell pepper, and stewed tomatos. Add chicken bouillon, garlic powder and onion powder and mix. Before cooking place all veggies ON TOP of chops and make sure they are totally covered, and add 1/2 cup of water to the sides of the crock pot. Cook on Low for 8 hours. Serve over rice if desired. Enjoy!!

    This was soooo good! I had a 2lb pack of pork loin so I doubled the recipe and left out the water. I also used mexican flavored stewed tomatoes and a little cayenne pepper for some good heat. I used brown rice instead of white rice to serve it over. This is definitely a keeper! - 4/20/09

    Yum! Did this in a covered pan on the stove. Only cooked it for 30 minutes (after browning the meat) while the rice cooked separately and it was wondeful! - 2/25/10

    I loved it, but my husband and kids don't care for so much tomatoe, so they asked me to leave that out next time. Really easy and very moist and tender. Will make again, without so much tomatoe to apease my family, lol. - 6/5/09
