This is a recipe born of me not going to the store one day. I threw some ingredients into a skillet and this family fave was born! Ingredients

4 boneless skinless chicken breasts cut into 1 inch pieces
3 large bell peppers cut into 1 inch pieces (we choose red, orange, and yellow)
1 large yellow onion cut into 1 inch pieces
2 limes juiced
1 large bunch fresh cilantro finely shredded
4 cups (prepared amount) brown rice
Directions
marinade chicken pieces in large ziploc bag with 1/2 the lime juice and 1/2 the cilantro for 4 hours.
Put marinaded chicken in a skillet (include all the juice from the bag) along with all peppers and onion, the remaining lime juice and remaining cilantro.
Cook over medium heat until chicken is fully cooked and veggies are tender.
Serve over brown rice.
This should make 8 servings 1 cup each including the rice.
