This is a mild chili with no heat but lots of flavor. It makes 3.5 quarts, so you can feed a crowd or freeze portions for easy meals later on. Ingredients

    1 lb lean ground beef
    2 cups chopped onion
    1 15oz can red kidney beans
    1 15oz can chickpeas
    4 14.5oz cans crushed tomatoes
    1/2 cup diced red bell pepper
    1/2 cup diced green bell pepper
    1/2 cup diced yellow bell pepper
    1 tablespoon chili powder
    2 cups tomato veggie cocktail juice
    Salt and pepper to taste

Directions

Brown the ground beef in a skillet until cooked through. Add the beef and all other ingredients to a 3.5-quart slow cooker, mix together and cook on low for 6-8 hours (you can start this before work and it will be ready for dinner!). Add salt and pepper to taste, serve with a sprinkling of low-fat grated cheese or sour cream on top for garnish.
