Introduction

Tasty winter water based soup. A really good way to eat a lot of kale. Tasty winter water based soup. A really good way to eat a lot of kale.
Number of Servings: 6

Ingredients

    1 T extra virgin olive oil
    1.5 c Carrots chopped
    1 c Celery chopped
    1 c Onions chopped
    10 c Water, filtered tap
    1 large Baked Potato, with skin 3" to 4-1/4" dia.
    .5 tsp Black Pepper fine ground
    12 c Kale chopped
    1 tsp Salt

Directions

put 6qt heavy bottom soup pot on med low heat
add olive oil, celery, carrot and onion
saute until tender
add black pepper and baked potato (3/4" cubes)
stir
add chopped kale
add salt to taste
add water increase heat to bring to simmer and then reduce heat to low
simmer until kale reaches desired tenderness
