Introduction

Ingredients

    1tbsp olive oil
    2 garlic cloves, chopped
    2 medium onions, peeled and sliced
    2 chicken breasts (no bone or skin), chopped into bitesize pieces
    1 small bunch coriander, chopped
    10g mint, chopped
    1tsp chilli powder
    1tsp ground cumin
    1/2tsp ground cinnamon
    1 can (410g) chopped tomatoes
    1 can (410g) no salt chickpeas (drained and rinsed)
    75g dried apricots, chopped
    25g flaked almonds
    a veg or chicken stock cube

Directions

Put oil, garlic, onions, chicken, herbs and spices in a large saucepan. Cook for 5 mins, stirring regularly.

Add all the other ingredients, refill the tomato can halfway with cold water and pour into the pan. Bring to the boil then reduce the heat and simmer gently for 25-30mins. Stir regularly.

Serve with whatever you like!
