Introduction

I adapted this recipe from one I found in Taste of Home's Light and Tasty magazine. It is one of our family's favorites. When you tire of just plain 'ol spaghetti- this really changes it up! Ingredients

    4 oz angel hair pasta
    1/2 lb reduced-fat smoked turkey sausage, cut into 1/2 in slices
    2 C sliced fresh mushrooms
    2 garlic cloves, minced
    4- 1/2 tsp minced fresh basil or 1- 1/2 tsp dried basil
    2 C plum tomatoes, sliced in 1/2 and the sliced again
    1/8 tsp salt
    1/8 tsp pepper

Directions

Cook pasta according to directions. While pasta is cooking, spray a large non-stick skillet with cooking spray and saute the sausage, mushrooms, garlic and basil until mushrooms are tender. Drain pasta and add to the skillet. Add the tomatoes, salt, and pepper; toss gently. Heat through.

    quick and easy! I did not measure, so I'm sure there is way more pasta than 4 oz. And I rinsed and drained a can of diced tomatoes, rather than slicing the tomatoes. So delicious! - 3/9/13

    Incredible!
    Very yummy, I changed up the recipe a bit by using actual spaghetti squash instead of spaghetti pasta. And my 6 & 8 year still ate it up.
