Introduction
This Soup is my answer to salad boredom, and even is yummy and makes a fabulous breakfast...I sometimes add a tablespoon of sour cream to the top of each serving, or a 1/4 cup of salsa depending on my mood. Ingredients

6 oz Hot Sausage, cooked and crumbled
6 slices bacon, fried and crumbled
1 medium to large head Cauliflower, chopped
4 cups Chicken Stock
8 cups Water
1 Tbs hot pepper sauce
2 pkg frozen chopped Spinach, thawed
3 cloves Garlic, chopped
Directions
Fry bacon, drain on paper towel, and crumble when cool.
Fry sausage, crumbling small and drain. Add chopped cauliflower and garlic and saute 5 minutes. Add Chicken Stock and water. Bring to a boil and then simmer until cauliflower is soft. Add 1 tbs Hot Pepper Sauce (more or less to taste) and spinach and simmer an additional 10 - 15 minutes.
Serve plain or with a sprinkling of Parmesan, a tbs of sour cream or some salsa depending on your taste.
