Ingredients

    3 to 4 sweet potatoes, skin on
    1 tbsp Extra Virgin Olive Oil
    3 tsp Brown sugar
    1/4 tsp black pepper

Directions

1. Wash sweet potatoes, but don't peel.
2. Cut sweet potato in half, then in long 1 inch strips (if they are too thick they won't cook all the way through)
3. Place all cut potatoes in a bowl and drizzle extra virgin olive oil over them.
4. Move these to parchment lined cookie sheet so all potatoes can lie flat.
5. Sprinkle brown sugar & ground black pepper over the potatoes
6. Cook in 400 degree over for 8-10 minutes.
7. Turn them over with fork and cook for 1-2 minutes more.

Depending on the size of the potato, this recipe makes 6 good size servings that pair well with most chicken dishes.
