Ingredients

    2 tsp active dry yeast
    1 tsp sugar
    1-1/4 cups warm water
    3-13 cups unbleached all purpose flour
    1-1/2 tsp kosher salt
    3 tsp olive oil

Directions

Dissolve the sugar and yeast in the warm water. Let sit for 5 minutes, until the mixture becomes foamy. In the bowl of a food processor (using the dough blade), mix the flour, salt and 2 tsp olive oil. With the food processor running on dough speed, slowly pour the yeast/water mixture into the flour mixture. Run the food processor until the dough comes together, and then continue to process for an additional 30 seconds to knead the dough.

Using the last 1 tsp of olive oil, grease a large bowl. Place the dough into the large bowl and cover it with the olive oil. Cover the bowl with plastic wrap and set it aside for about an hour. This makes enough dough for 2 pizzas, so cut it in half before rolling it out.
