Ingredients

1 tbsp. olive oil
.5 cup chopped onion
2 or 3 cloves chopped garlic
12 medium size tiger shrimp (thaw under running water if frozen, drain well)
1 cup skim milk
2 tbsp. low fat cream cheese
1 tsp. dijon mustard
1 cup frozen peas (or broccoli, spinach)
.5 tsp. nutmeg
Dash salt
1 tsp. black pepper
2 tbsp. grated parmesan cheese
Serve with 4 cups cooked whole wheat pasta.
Directions
Saute garlic, onion and shrimp* in olive oil over med./high heat for a minute or two. Lower heat and add milk, whisk in cream cheese and dijon mustard until smooth. Add peas, nutmeg, salt and pepper and simmer for 15-20 mins. Once sauce has thickened, stir in parmesan cheese. You may have to add some flour and water (combined in a small bowl to make a smooth liquid paste prior to stirring into sauce) to thicken, allow to simmer for a few more minutes. Season with extra salt and pepper to taste, if desired. Gently stir into hot pasta, serve with a nice salad. Makes 4 servings (1 cup pasta/3 shrimps per person). The nutritional info includes the pasta.
