Introduction

This is the "real deal", authentic Mexican caesar salad dressing. It has a tangy dressing that is loaded with Omega-3s. While the fat content may seem high, if you take a look it is almost all monounsaturated fat, or
"good fat" because of the anchovy paste.

Number of Servings: 8

Ingredients

    1-2 tsp anchovy paste
    1/3 cup lemon juice
    1/2 cup olive oil
    1 tsp Worcestershire sauce
    1/3 cup grated Parmesan (fresh is best)
    2 cloves garlic, minced
    salt and pepper to taste
    1 coddled (boiled for 1 min) egg (optional)

Directions

Combine anchovy paste, lemon juice, olive oil, Worcestershire sauce, Parmesan cheese, minced garlic, salt and pepper in a jar. Shake unti mixed well. Refrigerate for at least an hour. Pour over prepped romaine, toss, add croutons, and serve immediately. Makes dressing for 1 large or 2 small heads of romaine lettuce, enough for 8 side salads.
