Ingredients

2 quarts skim milk
1/2 cup milk powder
1/2 cup splenda
1 package unflavored gelatin
1 teaspoon vanilla flavoring
Directions
In a large saucepan, combine milk, milk powder, and slpenda. Sprinkle gelatin over the surface of the milk and let stand until gelatin softens. About 10 min. Using a candy thermometer, heat the milk to 175F, stirring constantly. Remove from heat and let cool to 110-113F. THIS IS VERY IMPORTANT! If the milk is too hot or too cool it will kill the yogurt bacteria in the starter. When the milk is at the right temp, add some of the milk to the yogurt and mix until smooth. Blend the yogurt mixture into the milk and add the vanilla. Place in a yogurt maker undisturbed for eight hours. If you disturb the yogurt you end up with curdles. If you let the yogurt incubate for longer than eight hours it gets acidic. Place in the refridgerator overnight. You can use a good quality wide mouth thermos if you don't have a yogurt maker, but the thermos needs to keep the yogurt warm for at least 8 hours.
