Ingredients

2c low sodium chicken broth
2c milk
3 1/2T flour
2c cooked rice
1 chicken breast, chopped
1/2 onion, diced
3/4c mushrooms, sliced
3/4c carrots, chopped
3/4c bell pepper, chopped
1t curry powder
1/2c cheddar cheese, grated
1/2t salt
1/4t pepper
Directions
According to the original recipe, this makes 6 servings; however, I found that it makes 4 or 5 when used as a main dish.
1) Heat up broth over medium heat. Combine milk and flour either by whisking or shaking in a closed jar. Add milk mixture to pot and bring to a boil, stirring constantly. Add curry powder. Reduce to low heat.
2) Meanwhile, sauté chicken, onion and carrot until chicken is cooked and vegetables are soft. Add to broth-milk-curry mixture. Add rice as well. Simmer over medium-low heat for 20 minutes, stirring occasionally.
3) Add cheese, stir until melted and combined. Serve.
