Ingredients

1 skinless boneless chicken breast - 120 calories
Green Pepper strips, .5 cup
Red Pepper strips, .5 cup
Onion Strips .5 cup
1/2 small Tomato
1 tablespoon of light sour cream
1 tablespoon of "I can't believe its not butter"
1 tablespoon of Lawry's Spicy Taco Seasoning
3 tablespoons of Lavictoria Hot salsa
2 cups of shredded iceberg lettuce
Directions
1. Wash chicken peice thoroughly
2. Cover chicken with saran wrap and beat with a meat beater until thin.
3. Cut chicken into strips and season with Lawry's Hot and Spicy Taco seasoning (1 tablespoon should be sufficient)
4. In a small skillet place 1/2 cup of water. Bring water to boil and add chicken, reduce to heat and shimmer until chicken is done.
5. Cut vegetables into to strips or chucks whichever you prefer.
6.In a separate skillet place 1 tablespoon of "I can't believe its not butter" under low heat add vegetables and simmer until tender.
7. Add chicken to vegetables and simmer for 2-3 minutes.
8. Place 2 cups of lettuce on a plate and pour chicken and vegetable mixture over the bed of lettuce
9. Add salsa and sour cream for a mexican fill you will truly enjoy
