Ingredients

    4 whole wheat tortillas
    1 cup black beans, drained & rinsed
    1 cup brown rice, cooked
    1 cup canned tomatoes w/ chilis, drained
    1 small onion, diced
    1 cup bell pepper, diced
    3 cloves garlic, minced
    1/2 cup vegetable broth
    1 TB chili powder
    2 tsp cayenne pepper
    1 tsp hot sauce
    1/2 cup fat free shredded cheese, divided

Directions

Preheat oven to 375, spray a 8x12 pan with fat-free cooking spray, place two of the tortillas on the bottom of the pan.

Spray frying pan with fat-free cooking spray, saute onions, peppers and garlic until soft. Add spices and broth. Simmer for 10 minutes, until liquid reduces.

Mix cooked rice with beans, tomatoes, sauteed mixture and half of the cheese (1/4 cup). Spread 1/2 mixture over the tortillas in pan, place the remaining tortillas over mixture. Top with remaining mixture, and sprinkle with reserved cheese.

Bake for 10 minutes, until cheese is melted and bubbly.

Cut into six slices and serve.
