Ingredients

    1 pound hamburger
    1 onion, chopped
2 cloves garlic, or less, we really like garlic, minced
    Basil to taste
    Oregano to taste
    Salt and peper to taste
One 10 oz can tomato sauce
2 cups dry elbow macaroni, cooked
    3 tbsp flour
3 tbsp light butter or margarine
    1.5 cups skim milk
1 cup cheddar cheese, could be lowfat

Directions

Brown hamburger with onion and garlic, drain grease. Add spices and tomato sauce. Cover and let simmer. At the same time you start the hamburger cook the macaroni until just shy of al dente. While hamburger and sauce is simmering in a seperate sauce pan melt butter, and whisk in flour. When bubbly whisk in milk a little at a time, till thickened, add cheese. Stir till melted. Add the noodles to the macaroni to the hamburger and sauce, and stir to coat the macaroni with sauce. Pour cheese mixture on top of macaroni, and bake at 350 for 10 minutes. Sometimes I just put it under the broiler until it is a little bit brown. Makes about 8 1 cup servings.
