Introduction

Ingredients

    3/4c. All-Bran cereal
    1 c. skim milk
    2/3 c. flour
    1/3 c. splenda
    2 tsp baking powder
    1/2 tsp baking soda
    1 tsp allspice
    1/2 tsp cloves
    1-1/2 c. oat bran
    2/3 c. raisins
    1 large apple, peeled, cut into 1/4''cubes
    1 egg -slightly beaten
    2 tsp vegetable oil (I use canola
    1/2 c. applesauce (unsweetened)

Directions

1. Mix the All-Bran and skim milk in a bowl and let stand for a few minutes. Than add egg ,applesauce and oil - stir well.

2. In a large bowl, mix the flour, sweetener, baking powder, baking soda, and spices. Stir in the oat bran, raisins and cut up apple.

3. Add wet mixture to dry and stir till moist.

4. Spoon the mixture into an oil-sprayed 12 muffin tray. Bake at 350 degrees F.

    Terrific flavor and density. I too used whole wheat flour - otherwise used exact ingredients as directed. I didn't bake as long as directed - a toothpick came out almost clean at 15 minutes so I pulled them. Very filling, thanks! - 4/22/13

    Made it with whole wheat flour. Very solid little muffin - not very fluffy or large but tasty and not very sweet. Didn't have any allspice so threw some cinnamon in there - tasted great. - 12/7/09

    I liked the muffins. They're not too sweet, also needs 1.5 cups flour and the mixing section forgets to mention to add the egg and oil. - 1/19/08

    thanks for the information - I lthink that I have made the necessary corrections. Just a note there is only 1/3 c. splenda in the receipe
