Ingredients

    1 can of Thai coconut milk (13 oz)
    1 tbsp curry paste, green yellow or red
    1 lb. boneless chicken breast
    2 tbsps seasoning sauce
    1 tomato, seeded and diced
    1 yellow bell pepper, diced
    1 red bell pepper, diced
    1 green bell pepper, diced
    3 scallions, diced
    ½ lb. fresh mushrooms, sliced
    2 tbsps lemon juice
    2 tsps Thai garlic chilli pepper sauce

Directions

Cut the chicken breast into strips. In a frying pan, dissolve the curry paste in 2 tbsps of coconut milk over medium heat. Add the chicken and seasoning sauce. Sauté the mixture for 3 to 4 minutes or until the chicken is lightly brown. Pour the remaining coconut milk. Stir well.

Add tomato, yellow, red and green bell peppers, scallions and mushrooms. Simmer for about 2 to 3 minutes until vegetables are tender but slightly crisp. Add lemon juice and garlic chilli pepper sauce and stir well.

Serve with jasmine rice.

    Excellent recipe. I added fresh. Did not use the seasoning sause, instead just used S&P and a Tbsp of garlic. Got the thumbs up and a "make again" request so this one goes into my recipe box! :D - 5/20/09
