2 lbs lean ground beef
! onion, diced
1 green bell pepper, diced
1 can corn, drained
1/2 cup barbeque sauce
1 can diced tomatoes, drained
2 (8.5 oz) pk jiffy corn mix
2 eggs
.66 cups milk
Directions
Preheat oven to 400 degrees.
crumble the ground beef in large skillet, cooing on medium heat until done. add the onion, pepper,corn and tomatoes. cook until vegetables are tender. drain excess grease, and stir in the BBQ sauce. spread beef mixture evenly into 13x9 baking dish.
prepare the corn bread mixes as directed. spread the batter over the top of the beef mixture.
Bake for 20 to 25 minutes, in preheated oven, until the top is golden brown and knife inserted comes out clean.
