Introduction

Number of Servings: 4

Ingredients

    12 oz boneless, skinless chicken breast cut into bite-sized pieces
    1 TB oyster sauce
    2 TB dark soy sauce
    2 TB dry sherry
    1 TB peeled, grated fresh gingerroot
    1 TB canola oil
    2 cloves garlic, minced
    1 medium onion
    1 c chicken broth
    1 tsp granulated sugar
    4 c broccoli crowns cut into bite-sized pieces
    1 TB cornstarch mixed with 1 TB water
    1/4 c dry-roasted cashew pieces

Directions

Combine chicken with oyster sauce, soy sauce, sherry and grated ginger. Set aside while preparing remaining ingredients.

Heat oil in large nonstick skillet over medium heat. Saute onion until soft and translucent; add garlic and saute an additional minute or two. Increase heat to high and add chicken and marinade. Stir fry until chicken is cooked through, approximately 8 minutes, stirring constantly. Stir in broth and sugar. Add broccoli, reduce heat to medium-high and cook about 8 more minutes. Pour in the cornstarch mixture, cook until sauce is clear and thickened, about 3 - 5 minutes.

Serve over brown rice and sprinkle one tablespoonful of cashews over each serving.

    Incredible!
    I like that oyster sauce flavor...I think it would be bland without it (but I love Asian food). I added some other veggies as well because I had them on hand. I added carrots, snow peas and celery. Yum! - 12/3/10

    great! I'd cook the chicken to about 80% next time (5-6min) then add broth. (chicken was overdone) - 1/25/08

    Sorry to be the spoiler here, but I guess I discovered I do NOT like oyster sauce. I think I would have liked this if I had not added it. Had to mask that flavor by adding more sherry and throwing in some crushed red pepper. Probably would not make this again, though. - 8/3/07

    very good! satistfied my craving for broccoli and chicken chinese! Even hubby said it was good and he doesn't really do chinese or healthy food. will def make again. i didnt have oyster sauce but it didnt need it, will make with next time. - 7/23/07
