Introduction
I came by this recipe one day when I had everything to make my meatloaf except an egg. So I decided to do a bit of quick thinking and came up with this!I came by this recipe one day when I had everything to make my meatloaf except an egg. Number of Servings: 6
Ingredients

1lb Ground turkey
1 can Low Sodium Diced Tomatoes
1 Red Pepper -Chopped
1 Yellow Pepper -Chopped
½ Red Onion –Diced
Salt
Pepper
Mrs. Dash Original Blend
3/4 cup Ketchup
2tbsp Honey Mustard
1tbsp Yellow Mustard
1 cup Water
2tbsp Brown Sugar
Directions
In a non-stick pan on medium heat:
- Brown meat. Add salt, pepper, seasoning to taste.
- Stir in onions and allow to start turning translucent
- Add diced tomatoes (along with juice from can), ketchup, mustard (honey & yellow), water, & sugar.
- Stir & taste for seasoning.
- Lower heat to medium-low and allow to simmer for 20 – 25 minutes.
- Stir in peppers in the last 5 minutes to keep the sweet flavor & crunch.
Serve on favorite roll.
