Ingredients

    canola non stick cooking spray
    8 oz boneless skinless chicken breast, chopped

    2 tablespoon soy sauce
    1/4 cup onion, chopped
    1/4 cup green bell pepper, chopped
    1/4 cup frozen peas
    1 10 oz pkg. frozen broccoli
    1 cup frozen whole green beans
    1 8 oz can of water chestnuts
    1 15 oz can baby corn nuggets

    canola non stick cooking spray
    3 cups brown rice cooked
    1 tablespoon soy sauce
    1/4 cup onion, chopped
    1/4 cup green bell pepper, chopped
    1/4 cup frozen peas
    4 med. baby carrots, thin strips
    2 jumbo eggs scrambled

Directions

spray a large skillet with a non stick cooking spray
stir fry chicken on med. heat till cooked.

add next 8 ingredients and stir fry till veggies are cooked.

in a separate skillet combine the next 7 ingredients
stir fry on med. heat till veggies are cooked
push rice and veggies to the sides and pour the scrambled egg into the center, and cover for about a min. scramble the egg and cover for 30 sec. then mix and finish cooking the the egg in your rice mixture.
makes about (6) 1 1/2 cup servings
