Introduction

Number of Servings: 6

Ingredients

    1 lb extra lean ground beef
    1 medium onion, 2-1/2" diameter
    32 oz petite diced tomatoes
    1 cup brown long grain rice
    1 cup tap water
    1 packet taco seasoning mix (1.25 oz packet)
    1.5 tsp chili powder
    1 tsp oregano
    1/2 tsp garlic powder
    1/2 tsp ground cumin

Directions

Chop onion to desired size.
Place ground beef into dutch oven or pan to hold 6-cups.
Add onion to beef and brown.
Once browned, transfer beef and onion to strainer and rinse thoroughly with hot water to remove excess fat. Rinse pan out as well, wiping with a paper towel to remove as much fat as possible. Return beef and onion to pan.
Stir in remaining ingredients.
Bring to boil, reduce heat and cover.
Simmer for 50 minutes or until rice is tender.
Makes 6, 1-cup servings.
