Ingredients

joseph's lavash bread(1 serving)
mozzarella cheese 1 oz
3 ounces of boneless skinless chicken breast
1/4 cup salsa
1/4 cup of onions sliced
3 medium mushrooms sliced
1/2 green bell pepper sliced
1 1/2 teaspoons of virgin olive oil
Directions
This makes one sandwich.
Take the chicken and chop it into tiny peices. sautee it in a pan with the garlic and the olive oil. Season the chicken with Salt and pepper to taste. The chicken is chopped small and the pan is hot so it should not take more than 5 minutes for it cook the whole way through. remove the chicken from the heat and set it aside in a bowl.
Sautee all the veggies in the same pan until they are tender. Cook on medium to medium High. This too should not take longer than 5 minutes.
Add the veggies to the chicken and mix.
Using a non stick pan, you may optionally spray the pan with Cooking spray, but it is not necessary to do so. It will just make the sandwich a little crispier if you do.
take the lavash bread and place it in the non stick pan. Place 1/2 the cheese on half of the bread. pile the veggies and chicken on top of it. Then sprinkle the remaining cheese on top. Fold the bread over and grill each side for 2 minutes. Grill on medium to medium high
I like to place a bacon press on my sandwich to compress it while cooking, but you can just press it with a spatula if you do not have one.
Place the salsa on the plate and you can dip your sandwich in it.
