Ingredients

1500g (3 1/3 lbs) chicken breasts
2 tbsp olive oil
4cloves garlic finely chopped
5 cm piece ginger finely chopped
2 stems lemon grass (white parts) finely chopped)
2 tsp cayenne pepper
2 tbsp curry powder
2 med onions chopped
2 tsp sugar
1 tsp salt
1.5 cups lite coconut milk
1/2 c water
garnishes: garlic chives, cilantro and peanust
Directions
1) Chop chicken into pieces, wash and pat dry.
2) Heat oil in pan, add garlic, giner, lemon grass, cayenne, and curry powder, and cook over medium heat for 3 minutes stirring regularly. Add the chicken, onion, sugar, and salt. Cover and cook for 8 mins until onion is soft. Cover and cook for 15 mins - braising will produce liquid.
3) Add coconut milk and water and bring to a boil stirring occassionally. Reduce heat and simmer until chicken is tender - 30 mins. Serve garnished with chives, peanuts or cilantro.

Just want to comment that in the ingredients list it says 1.5 cups canned fat free milk but in the directions it says coconut milk. Is it coconut milk?? - 2/5/09

whoops - just in the process of fixing it. should be coconut milk! it would work with canned milk as well (if you don't like coconut milk)
