Introduction

Ingredients

6 oz Whole-Wheat Pasta (I used elbow pasta)
1 Medium Onion, Chopped or Sliced
1/2 Cup Sliced Red or Green Pepper
1 Cup Sliced Mushrooms (I used portobello)
4 Cups Fresh Spinach
1 TBSP Basil
1-2 Cloves Garlic
2 TBSP Parmesan Cheese
Salt & Pepper to taste, and any otehr spices you'd like to add!
Directions
1) Cook the pasta according to the package & drain.
2) In a large skillet over medium heat, add olive oil, mushrooms, onions, peppers and garlic - cook until veggies are tender (about 3 minutes).
3) Stir in the spinach & spices and cook until spinach is slightly wilted (about 1 minute).
4) Toss together all ingredients with the pasta & sprinkle each dish with parmesan & enjoy!
