Introduction
This is a slimmed down version of a fattening Louisiana delight. Yummy, quick and easy. Serve over brown rice and garnish with green onions. Or toss with whole wheat pasta. Ingredients

1 lb. bag of peeled crawfish tails
2 10-3/4 oz cans of 98% fat free Cream of Mushroom Soup
1 cup diced onions
1 cup diced celery
3 cloves chopped garlic
3 tbsp of Smart Balance light buttery spread
1/2 cup of fat free milk
Cholula hot sauce or your favorite
Directions
Add 1 tbsp of smart balance butter to a large skillet over medium-high heat. Add onions and celery and saute for about 5 minutes until translucent and brown. ( I will usually shoot a couple of sprays of butter to keep onion/celery mix moist while cooking.) Add chopped garlic and remaining butter. Cut a corner off of the bag of crawfish tails and squeeze juice into pan and saute for 2 more minutes.
Add cans of cream of mushroom soup and milk. Add dashes of hot sauce or creole seasoning to taste. Reduce heat to medium to low and simmer for 10 minutes, stirring occasionally. If you have sliced green onions add those at this time but it's not necessary.
Serve over brown rice (nutritional info on rice not included.)
