Introduction

This is a great vegan or vegetarian alternative to the traditional sweet and sour dish. This is a great vegan or vegetarian alternative to the traditional sweet and sour dish.

Ingredients

    Canola Oil, 2 tbsp

    3 Bell Peppers, one each in red, orange, and yellow, large (3-3/4" long, 3" dia), chopped
    Onion, 1 large sweet white, chopped
    Pineapple, fresh, 2 cup, chopped
    Carrots, raw, 2 cup, chopped
    Natural Fried Tofu, 15 oz, sliced
    Baby Corn, 1 8.11 0z can, drained

    Brown Sugar, 1/4 cup, packed
    2 Tbsp Sugar
    Soy Sauce, 1/4 cup
    Yellow Mustard, 1/4 cup
    Ketchup, 1/4 cup
    Rice Vunegar, 1/4 cup

    Sesame Seeds, 2 tbsp

Directions

Cut peppers, carrots, onions, and pineapple into bite size pieces.

Heat wok over medium heat.

Add Canol oil and heat for one minute.

Add carrots, and onions and saute for about 5 minutes.

Add peppers and saute for 3 minutes

Mix sugar, soy sauce, mustard, vinegar, and ketchup in a bowl. Pour mixture over veggies, mix, and saute for one minute.

Add tofu and saute for another minute.

Add baby corn and pineapple and saute for an additional minute.

Serve over half a cup of rice per serving. Sprinkle with sesame seeds.

    This turned out looking just like restaurant sweet and sour tofu. But, I don't think I'll make it again. It was a lot of chopping work. The sauce was very thin and not as flavorful as I would have liked. - 3/28/10
