Introduction

A slight variation that (I think) I found on vegweb.com. A slight variation that (I think) I found on vegweb.com.
Number of Servings: 5

Ingredients

    1 tbsp olive oil
    1 medium onion
    1/2 c quinoa
    1/2 c dry red and yellow lentils
    1 c tomato sauce
    1 c frozen peas
    2 c vegetable broth
    1 tsp each dried herbs: thyme, sage, rosemary, oregano, whatever you have
    150g marinated tofu

Directions

Sautee the onion until golden. Throw in lentils and quinoa and toast for 2-3 minutes. Add peas and mix quickly. Add tomato sauce, vegetable broth, spices and chili powder. Bring to a boil, reduce heat to minimum, cover and cook for about 20 minutes. Uncover, check doneness of quinoa and lentils, add tofu, stir to evaporate excess of water until it's thick enough to resemble risotto, creamy but not soupy.
