Introduction

This recipe is much easier that it looks because the beans and vegetable stock are just 1 can each but it would not let me put that. This is a great make ahead to use for lunch all week or to make burritos to freeze. This filling is not bland at all and super healthy. Ingredients

    1 can black beans
    1 can pinto beans
    1 can vegetable stock
    1 cup salsa
    2 cups brown rice
    Add a few jalapeno slices if desired
    Tortillas if you want to make burritos

Directions

Makes a pot of filling to serve 6 or so. Add all the ingredients into your slowcooker. Leave it alone on low and come back in several hours. The rice will soak up the stock while it cooks and give the beans a delicious flavor along with the salsa and optional jalapenos for heat. Que Bueno!

    Incredible!
    I made this today, and it made a lot more than 6 servings but that's a plus. It is very tasty, but I needed more liquids since I rinsed the beans (I added tomato juice). The extra will be served alone or as a soup or another dish. Tonight I'll use this for burritos. Thanks. - 4/6/12
