Introduction

A simple salad that satifies flavour cravings. Easy to make and good hot or cold. It's quite filling, rich in vitamin A, calcium and fibre. A simple salad that satifies flavour cravings. Easy to make and good hot or cold. It's quite filling, rich in vitamin A, calcium and fibre.

Ingredients

    3/4 cup of fresh spinach
    1/2 of a 5" sweet potato, sliced
    2 pieces of sun dried tomatoes, cut up
    2 ounces of feta cheese, crumbled

Directions

Peel and cook a sweet potato in the microwave for 6 minutes on high. Cut into bite size pieces or slices.

Place the spinach on a plate. Add the sweet potato, the sun dried tomatoes and feta cheese.

Sometimes I heat the spinach (it's nice wilted) and sweet potato in the microwave before adding the tomato and cheese. Eating it all cold is also nice.

Makes 1 serving.
