Ingredients

4 Italian Sausage links
2 tsp olive oil
2 medium leeks, sliced
1 clove garlic, crushed
1 large carrot, chopped into cubes
2 stalks celery, sliced
2 tbsp all-purpose flour
2 beef bouillon cubes, crumbled
8 cups hot water
1/2 cup white wine
4 oz small shell pasta
15 oz can desired bean or combination of beans, ( such as pinto, kidney or butter0 drained
1 tsp chopped chili (opt)
salt and pepper to taste
Directions
Cut sausage links into pieces.
1. Heat oil in large heavy-based pan, add sausage pieces. Cook over medium heat for 5 minutes or until golden, sitrring regularly. Remove from pan and drain on paper towels.
2. Add leek, garlic, carrot and celery to pan, cook for 2-3 minutes or until soft, stirring occasionally.
3 Add flour, cook 1 minute stirring constantnly. add bouillon cubes; stir in water and wine. Bring to boil; reduce heat; simmer uncovered, 10 minutes
4 Add pasta, beans and chili to pan. Increase heat; cook 8-10 minutes or until pasata is tender. Return sausage to pan, add alt and pepper. Serve with chopped fresh parsley, if desired.
