Ingredients

1 quart Imagine no-chicken organic vegetable broth
1/2 large onion, chopped
1-2 T olive oil
2-3 cloves garlic
1 head escarole, cleaned thoroughly and roughly cut
1 can cannelini beans (15 oz)
1/4 tsp red pepper flakes
salt & pepper to taste
Directions
heat olive oil in a dutch oven or soup pot.
saute onion until translucent. add garlic and red pepper flakes. cook for 1 minute then add broth.
add drained beans to broth and heat until boiling.
add the roughly chopped escarole and let cook for 15 minutes or so then turn off the heat. Adjust the seasoning with salt and pepper. Garnish with parmesan cheese (not included in the calorie count).
