Introduction

Great texture, just the right sweetness, protein, fiber, and dang tasty. Great texture, just the right sweetness, protein, fiber, and dang tasty.

Ingredients

    1 c. All-purpose Flour
    1/2 c. White Wheat Flour
    1 c. Oats or Granola
    2 tsp. Baking Powder
    1 tsp. Baking Soda
    1/2 tsp. Salt
    1 tsp. Cinnamon

    1 banana, mashed (preferably overripe)
    2/3 c. Butternut Squash, cooked and pureed
    1/3 c. Zucchini, grated
    2 tbsp. Orange Zest (optional)
    1/3 c. Sugar
    1/2 c. Oil
    1 tsp Vanilla Extract
    2 tbsp Soy yogurt

Directions

1.) Mix dry ingedients in one bowl
2.) Mix wet and fruit/veggies in another bowl
3.) Combine dry and wet, mix just until flour dissapears
4.)Grease muffin pan and fill cups almost full
5.) Bake at 375 for 18 minutes or until toothpick inserted into center comes out clean

Makes about 11 medium sized muffins
