Ingredients

    250g mushrooms, finely chopped
    2 cloves garlic, finely chopped
    2 large onions, finely sliced
    2 tbsp balsamic vinegar
    2 carrots grated
    2 tsp tomato paste/puree
    4 tbsp breadcrumbs
    1 small egg, beaten

Directions

Makes 4 burgers

1) Heat a large non stick pan and add 4tbsp water
2) Add mushrooms and garlic. Saute for about 10mins until water has evaporated, then remove to cool
3) Put onions, vinegar and 2 tbsp water in a pan and cook over a low heat for about 10mins. Then remove
4) Add carrots, tomato paste/puree, breadcrumbs and egg into mushrooms and season as you like
5) Shape into 4 burgers and let chill for about 1/4 hour
6) Fry until done.
7) Serve as you like-I have them in a sandwich with tomato and spinach with the onions on top =]

    Incredible!
    I had to really squeeze the patties to make sure that I got rid of alot of the mositure, but these were REALLY good. - 2/23/11
