Ingredients

    1 lb beef chuck chuck tender-cut in bite size
    1 cup flour
    1-14.5oz can petite diced tomatoes
    1-15oz s and w black beans rinsed and drained
    1 tbsp dried parsley
    1 tbsp dried onion
    1 tsp blk pepper
    1 tsp paprika
    1tsp. chili powder

Directions

coat beef in flour-season w/salt and pepper
heat olive oil in pot
add beef and brown on both sides. scrap bottom of pan when done but do not remove. add beef broth cover and simmer for one hour or until meat is tender. add tomatoes, beans and onion,parsley,paprika and chili powder. simmer covered for 30 minutes.
makes 4 1-cup servings
